Fill the perforated aroma infuser with red or white wine, juice, stock or beer – whatever takes your fancy. Season the chicken and insert on the holder – then slide into the oven (or kettle grill). While the poultry roasts evenly on the outside, the evaporating liquid gently steam cooks from the inside, infusing the meat with aroma. Your deliciously fragrant, grilled chicken is ready in around 60 minutes: The outsides all wonderfully crispy, the insides unbeatably juicy and tender and all of it low-fat and healthy.
