Reproducing the art of ancient sword forging, using today’s high-tech steel.

As with Samurai competition swords these Shun Premier knives are made of several layers of forged steel. The extremely hard core made of VG-10 steel (hardness 61 HRC *) retains its sharpness for a long time (other knives: 52 HRC *). Because of their excellent quality, Tim Mälzer is proud to endorse them.
The newly developed 32-layer stainless damask steel on the outside gives the blade the necessary elasticity.
Instead of regular knives, which are often only stamped out of a single layer of steel these special knives have been forged from 32 layers of damask steel. As a result, each knife hase its own specific surface structure, just as unique as a fingerprint.
Sharpened and finely polished by hand.
An unsurpassed sharp edge is produced by the convex grinding work on both sides of the blade. Star chefs swear by Shun knives, one of the most comprehensive series of damask steel blades in the world.
Ergonomic handle of smart walnut wood.
The 10.5 (4") resp. 12cm (4.7") long handle fits comfortably in the hand and ensures an ideal balance. The finely laminated walnut pakkawood is extremely robust and complies with the strictest hygiene regulations (NFS certificate) for use in the preparation of food.

* HRC (Rockwell hardness test) is an international unit for measuring the hardness of a material, which is normally used for knives. These extremely sharp blades rarely need sharpening. But if they do, the ideal tool for the job is this Japanese combo grindstone that is much safer and effective than the usual, often coarse sharpening steels or stones.
