The original steak cutlery from Tim Mälzer's "Bullerei" - now available for your home.

Developed by star chef Tim Mälzer and the renowned traditional Japanese company KAI.

Tim Mälzer is known from the cult cooking series "Kitchen Impossible", his Bullerei restaurant in Hamburg is legendary and he is regarded as one of the best steak makers in the world. So it's no wonder that he prefers to rely on his own steak knives, which he developed together with the traditional Japanese forge KAI.
32 outer layers of stainless Damascus steel give the blades just the right amount of elasticity.
No comparison to normal knives, which are often stamped out of simple steel. The 32 layers of Damascus steel are compressed by forging, which makes the blade both hard and elastic.
Each knife as individual as a fingerprint.
The applied hammered surface - known in Japan as Tsuchime - creates a different surface grain for each knife. This is not only aesthetically pleasing, but also makes it easier to remove the meat from the knife thanks to the small air cushion between the meat to be cut and the blade.
Hand smoothed and finely polished.
Use at your own risk - is printed on every wooden box in which the knives are delivered. That says everything about the well-known sharpness of the blades. This is created by special convex grinding on both sides.
The ergonomic handles are made of finely laminated walnut wood.
A continuous bore provides stability and balance when cutting. Ergonomically designed - ideal for left- and right-handed users. As a special detail, the handles of the knives are engraved with the famous Tim Mälzer bull's head. Blade length: 13cm (5.12"). Handle length 10cm (3.94"). Blade hardness: 61 ± 1 HRC. Weigh 78g (2.75 oz.) each. Made in the Japanese blacksmith metropolis of Seki. Hand wash only.
The perfect complement: the KAI Shun fork set.
Made of stainless steel with laminated walnut handles. Total length 21 cm (8.27"). Weigh 60g (2.12 oz.) each. Hand wash only.
